Create Our Chef’s Latest Recipe

Test your culinary skills by using our River Grill Restaurant’s chef recipes! A chef favorite will be shared for you to create on your own. These recipes will be updated seasonally, so check back often.

Sorrel River Bolognese Sauce
(Makes approximately 2 quarts)

  • 5 lbs ground buffalo
  • 1 1/2 lbs ground pork
  • 1 cup mirepoix (equal mix diced carrots, onions, and celery)
  • 5 lbs peeled, garden-fresh tomatoes
  • 1 small can tomato paste
  • 1/4 cup oregano
  • 1 cup milk
  • 1 cup burgundy cooking wine
  • 1/2 cup Parmesan cheese

Sorrel River Ranch Bolognese RigatoniSweat mirepoix in large saucepan over low heat until onions turn translucent and carrots are tender
Add in meat and continue to cook, stirring occasionally
Cook until meat is browned
Spoon out excess grease as needed (do not drain)
Add in wine and milk, let simmer for 20 minutes
Add in tomato ingredients and simmer for one hour
Remove from heat and add salt and pepper, oregano, and parmesan cheese
Store in separate, smaller containers to cool faster
Serve over your favorite pasta boiled al dente.
